Though it may seem like it, no colour, berries or berry flavours have been added- Ruby chocolate is made from the Ruby Cocoa Bean, in which the colour and flavour are naturally present. It has a beautiful warm caramel and pale amber colour, with an opulent golden hue.

This chocolate can be used for medium enrobing, moulding, panning, piping, spraying with an airbrush and flavouring confectionery, flavouring patisserie, desserts, ice creams and sorbets, and enrobing/icing in baking.
Exposure to light, air, humidity and high temperatures may cause ruby chocolate to change colour - it is important to consider this in regards to storage and working conditions. Store in a clean, dry, odourless environment, between 12-20C, or 45-50C when in liquid form.
