These food colouring pastes are very concentrated, so produce deep, vibrant colours and last a long time, but need to be used very sparingly to avoid ending up with an excess of colour. You shouldn't add more than 3g of paste for every 1kg of cake/decoration. Add a tiny amount of colour with a cocktail stick, building up until you reach your desired intensity. Allow the colour a few minutes to develop and darken, before adding a little more with a cocktail stick, if needed. Work with natural light to get the most accurate colour result. If youÕre kneading the colour into rolled icing make sure to wear gloves to avoid staining your fingers. Consider the colour of the ingredients in batter and icing as they can affect the result of your food colouring.
