Imagine you’ve planned out the perfect celebration cake, complete with decorative meringues and chocolate, to make for an upcoming celebration. You’ve got your recipes in order, lined up all your ingredients and picked out the perfect colours for your cake, icing and decorations. You get stuck into the process of making the cake, excited to see it come to life but, upon finishing it, you find the colours just weren’t what you were hoping for. Sounds disappointing and frustrating, doesn’t it?

If you’ve ever had this happen to you, or this sounds like a nightmare situation you’re determined to avoid, you might want to consider Colour Mill’s food colouring. They’re specially designed to produce even, consistent colours every time, so you don’t have to worry about the appearance of your bakes and desserts.

How do Colour Mill’s food colourings do this?

It’s all in the formula. Colour Mill’s food colours are 100% oil-based so, unlike typical water-based gels which repel the oils in your mixture, they get along well with them (as well as all the fats and sugars, too!). This means the colour disperses properly throughout the mixture, blending thoroughly. In addition, the colours are processed specially to produce ‘micro pigments,’ which are both grain- and streak-free, reducing the chance of an uneven, speckled appearance in the finished product. The colours are resistant to fading, too, as they’re created from pigments rather than dyes.

All of this results in the perfectly coloured bakes, desserts and icings you set out to achieve.

What mediums can Colour Mill’s food colourings be used with?

Colour Mill’s food colourings are a great choice for dying a wide range of edible items containing fats and oils. They’re especially ideal for use with swiss meringue, chocolate and cocoa butter, sugar paste (fondant) icing, cake batter, ganache and buttercream icing, allowing for plenty of opportunities to get creative - you can produce immaculately coloured sponges, topped with immaculately coloured buttercream, and you can even make sure those decorative meringues and chocolates are immaculately coloured too.

Plus, there’s a huge range of colours to choose from, so you can find your ideal shades and build a colour scheme that suits your occasion, theme or vision, coordinating all your treats and decorations. If you have something very specific in mind, you can mix colours and create your own custom shades, too.

As well as an extensive selection of colours, which are available in a large 100ml size as well as 20ml, Colour Mill also offer a choice of themed food colouring sets and a Booster colour enhancer. Booster is designed for use with any kind of conventional, non-Colour Mill gel and paste colourings which produce not-so-vibrant, unsatisfactory results. Acting as an emulsifier, it intensifies these colours, helping them to disperse and mix better - basically enabling them to behave in the way Colour Mill’s own food colourings do.

Just a few more things to note…

Make sure to give the bottle a good shake before each use, in case the colour has settled.

These colours are highly concentrated, which is great as it means that, not only do you get consistently coloured creations, but they’re also incredibly vibrant. It’s also great as you only need a small amount of colour for a dazzlingly vivid effect, so the bottle’s going to last you a little while. However, it’s also easy to end up with an excess of colour, which is not so great. Take care when applying - ending up with too much colour could ruin all your hard work, so make sure you add colour sparingly, one drop at a time, building up to your desired intensity. Colour Mill’s food colouring bottles have a squeeze-top dispenser lid, for increased control over colour to prevent this issue, though it is also a good idea to add the colour using a toothpick or cocktail stick, to be extra safe.

As well as being careful with application, it’s important to remember these colours need time to develop and deepen - overnight is ideal, if you have the patience, as it results in the most rich and vibrant colours.

There are no fillers or gums used in the formula, colours are 100% allergen free, and most of the colours (with a few exceptions) are suitable for vegetarians and vegans.

The full Colour Mill range is now available at Sugarcrafters so, if you like the sound of vibrant, even, consistently-coloured bakes, icing and desserts, go and check it out now!
