Gel strength (grade) is 120-155 g Bloom

Weigh out the gelatine according to the recipe. Soak the gelatine leaves in cold water for 5 minutes. Meanwhile, heat the quantity of liquid required in your recipe in a pan. Transfer the soaked gelatine leaves, having removed any excess water, to the gently simmering water to melt. Leave for 2 minutes, stirring occasionally.
Do not let the mixture boil as this can prevent a good set being achieved.
